Red Beans And Rice
- 1 lb. dried red pinto beans
- 2 qt. cold water
- 1 ham hock or sliced ham
- 1/2 lb. hot sausage, sliced thick
- 1 bunch green onions, chopped
- 2 stalks celery, chopped
- 3 medium onions, chopped
- 1 green pepper, chopped
- dash of thyme
- 4 bay leaves
- cayenne pepper
- salt and pepper
- 2 to 3 c. white rice (not instant)
- Rinse beans.
- Put in a big heavy 3-quart pot; add water, ham and sausage.
- Cook uncovered.
- Add chopped onion, celery, green pepper, thyme and bay leaves.
- Bring to a boil.
- Reduce heat and cover.
- Stir often.
- Season to taste with hot pepper, salt and black pepper.
- Cook until beans are done.
- Serve over cooked rice.
