Red Beans And Rice

  1. Rinse beans.
  2. Put in a big heavy 3-quart pot; add water, ham and sausage.
  3. Cook uncovered.
  4. Add chopped onion, celery, green pepper, thyme and bay leaves.
  5. Bring to a boil.
  6. Reduce heat and cover.
  7. Stir often.
  8. Season to taste with hot pepper, salt and black pepper.
  9. Cook until beans are done.
  10. Serve over cooked rice.
