Beef Barley Soup
- 3 12 cups water
- 34 cup tomato sauce
- 34 cup dried soup mix (Mix of lentils, barley, split peas)
- 1 beef bouillon cube
- 1 carrot, diced
- 1 potato, diced
- 1 celery, chopped
- 2 teaspoons dried basil
- 12 teaspoon salt
- 14 teaspoon black pepper
- 1 lb cooked lean beef
- In a large stockpot, combine water, tomato sauce, dried soup mix, bouillon cube, carrot, potato, celery and seasonings; bring to a boil.
- Reduce heat and simmer, covered for about 1 hout.
- Add beef.
- Cook for 30 minutes longer.
