Coconut rice
- 1 1/4 cup rice
- 1 1/2 cup water
- 1 cup unsweetened coconut milk
- 1/4 to 1/2 teaspoon salt (I use kosher style flake salt)
- Rinse the rice in cold water and drain well.
- Place in a saucepan with the water, coconut milk and salt.
- Place over high heat and bring to a boil.
- Stir, reduce the heat to low and cover the pot.
- Cook for 15 minutes.
- Remove from heat and let stand for 5 to 10 minutes.
- Fluff with a fork before serving.
