Miso- Great Soup!
- 1 teaspoon instant dashi stock
- 4 cups water
- 4 tablespoons shiro miso
- 14 cup dried wakame seaweed
- 12 cup soft tofu, small dice
- 2 scallions, sliced
- Heat up about 1 1/2 cups water to simmer for soaking the wakame.
- Turn off and add dried wakame until soft and ready to add to soup.
- Boil 4 cups water.
- When boiling add 1 tsp instant dashi.
- Let boil for 2 minutes and add scallions and tofu.
- Put 4 Tblsp miso paste into small bowl or glass.
- Add some of the dashi broth to make a "slurry" BEFORE adding to broth.
- Add "slurry" to broth.
- Let boil 1 minute & REMOVE from heat.
- Add soaked wakame to broth and pour mixture into serving bowl.
- Enjoy!
