One Skillet Balsamic Chicken and Pears

  1. Heat 1 teaspoon of vegetable oil in a non-stick skillet over medium-high heat.
  2. Add chicken and cook through, turning once, until golden brown in color.
  3. Depending on how thick your chicken is, this will take at least 5 minutes per side.
  4. Remove chicken to a plate and tent with foil to keep warm.
  5. Heat remaining 1 teaspoon of oil in the same skillet.
  6. Then add pears, and cook till softened and golden brown.
  7. In a liquid measuring cup, measure out 1 cup of chicken broth.
  8. Add vinegar, cornstarch, and sugar and mix well with a fork.
  9. Add broth mixture and dried fruit to pears in the skillet.
  10. Heat to boiling while stirring constantly.
  11. Then boil 1 minute or until thickened.
  12. Return chicken to skillet, coat in sauce, and heat through.
  13. Serve.
