Tuna Mound Recipe
- 1 c. butter, softened
- 1 (8 ounce.) pkg. cream cheese, softened
- 2 (7 ounce.) cans tuna, liquid removed & flaked
- 2 tbsp. minced green onion
- 1 tbsp. lemon juice
- 1/4 teaspoon dry whole tarragon, crushed
- 1/4 teaspoon salt
- Dash of pepper
- Leaf lettuce
- 1 hard-boiled egg
- 1/4 c. fresh chopped parsley
- Cream butter and cream cheese till fluffy.
- Add in tuna, onion, lemon juice, tarragon, salt and pepper.
- Beat at medium speed of electric mixer till thoroughly mixed.
- Chill.
- Shape tuna mix into a mound on lettuce lined serving plate.
- Press egg through a sieve.
- Garnish tuna mound with egg and parsley.
- Serve with crackers or possibly party rye bread.
