Scripture Cookies Recipe
- 1 c. flour
- 2 tbsp. cornstarch
- 1/2 c. sugar
- 1/2 teaspoon salt
- 1/2 c. salad oil
- 4 egg whites
- 1 tbsp. water
- 2 teaspoon vanilla
- 1/2 teaspoon lemon extract
- Type scriptures on 1/2 x 3-inch paper for each cookie.
- Have ready a straight- sided bowl to bend the cooked cookies over to shape them.
- Put them in a muffin pan so they will hold their shape while they are cooling.
- Stir together flour, cornstarch, sugar and salt.
- Add in oil and egg whites; beat till smooth.
- Beat in water and flavorings.
- Drop batter by level Tbsp.
- on a well-greased baking sheet and spread out proportionately with the back of a spoon into 4-inch circles.
- Bake till light golden.
- With a wide spatula, remove one cookie at a time.
- Put scripture paper on cookie.
- Quickly fold cookie in half, then bend cookie backwards over bowl to shape it.
- Place bent cookie in muffin pan to retain its shape.
