Orange Poppyseed Muffins
- 2 eggs
- 1/2 cup caster sugar
- grated rind of 1 orange King Sooper's 1 lb For $0.99 thru 02/09
- 250g block PHILADELPHIA Cream Cheese, softened
- 100g almond meal
- 1 tablespoon poppy seeds
- 1 cup gluten free plain flour
- 2 teaspoons gluten free baking powder
- 1/4 cup milk
- 1-2 tablespoons orange marmalade
- extra 1/4 cup marmalade to serve
- Beat the eggs and sugar until thick and creamy, fold through the orange rind, half the Philly*, almond meal and poppy seeds.
- Sift together the flour and baking powder, fold through the mixture alternately with the milk.
- Spoon into a greased and base lined 1/2 cup muffin pan to make 10.
- Bake in a moderate oven 180C for 20-30 minutes or until cooked and golden.
- Combine the remaining Philly* with the marmalade and use as a spread for the muffins.
- Top with extra marmalade, if desired.
