Orange Poppyseed Muffins

  1. Beat the eggs and sugar until thick and creamy, fold through the orange rind, half the Philly*, almond meal and poppy seeds.
  2. Sift together the flour and baking powder, fold through the mixture alternately with the milk.
  3. Spoon into a greased and base lined 1/2 cup muffin pan to make 10.
  4. Bake in a moderate oven 180C for 20-30 minutes or until cooked and golden.
  5. Combine the remaining Philly* with the marmalade and use as a spread for the muffins.
  6. Top with extra marmalade, if desired.
