Strawberry Mint Ice Cream with Stevia
- 2 cups fresh cream
- 1 cup milk
- 2 egg yolks (0ptional)
- 2 cups strawberries
- Leaves from one tall stalk of mint
- 2 packets Stevia (low glycemic herbal sweetner)
- Puree strawberries and mint leaves together (you can leave the tops on the strawberries, just remove strawberry and mint stems).
- Whisk puree in with cream, milk, yolks and stevia.
- Chill in bowl in freezer for 20 minutes.
- Remove from freezer and add to Cuisinart Ice Cream Maker.
- Process until it begins to mound up, about 20 minutes.
- Remove to a container and place in freezer for 4 hours before serving.
