Chocolate Chip Whoppers
- 3 tbsp. unsalted butter
- 2 oz. unsweetened chocolate
- 2 cups semisweet chocolate chips
- 3 eggs
- 2 tsp. freeze dried coffee crystals
- 2 tbsp. vanilla
- 3/4 cup sugar
- 1/3 cup flour
- 1/4 tsp. baking powder
- 1/2 tsp. salt
- 1 cup pecans, coarsely chopped
- 1 cup walnuts, coarsely chopped
- Preheat oven to 350F.
- Butter and grease two large cookie sheets.
- Melt butter and unsweetened chocolate.
- Stir in 1 cup of chocolate chips.
- When chips are almost melted, remove mixture from the heat.
- Mix eggs, coffee crystals, vanilla and sugar until smooth.
- Stir into the chocolate mixture.
- Mix dry ingredients (flour, baking powder, salt) and stir into the chocolate mixture.
- Add nuts and remaining chocolate chips.
- Stir well.
- Drop 1/4 cup of batter onto prepared baking sheet.
- Place cookies about 1-1/2-inches apart.
- Bake for 13-15 minutes or until the tops look crusty and crackling, but the insides are still moist.
- Let stand on baking sheet for 3-4 minutes, then place onto a wire rack to cool completely.
- Store in an airtight container.
