Korean Stir-Fried Pork with Red Pepper

  1. Cut the pork against the grain into slices about 2" x 1" x1/8".
  2. Cut the spring onion crosswise into very fine rounds.
  3. Combine pork, spring onion, garlic.
  4. ginger and hot fermented bean paste in a bowl.
  5. Mix well.
  6. Cover and set aside for 30 minutes or longer.
  7. Cut the pepper into 1/2" squares.
  8. Cut the onion into 1/2" cubes and then separate the layers.
  9. Just before serving put the oil in a large non stick frying pan and set over a high heat.
  10. When hot put in the pork together with all its marinade and stir fry for 3 minutes until the pork is white all the way through.
  11. Add about 6 tablespoons of water and the red pepper and onion.
  12. Stir and cook for a further 2 minutes on a high heat.
  13. Serve with noodles or plain rice.
