Key Lime Pie* * * * *

  1. Mix gelatin, 1/2 cup sugar and salt in saucepan.
  2. Beat egg yolks, lime juice and water together; stir into gelatin mixture. Cook over medium heat, stirring constantly, until mixture comes to a boil.
  3. Remove from heat; stir in grated peel.
  4. Add enough coloring for a pale green color.
  5. Chill, stirring occasionally, until thickened.
  6. Beat egg whites until soft peaks form.
  7. Add remaining sugar gradually and beat until stiff peaks form.
  8. Fold gelatin mixture into egg whites; fold in cream.
  9. Spoon into chocolate crust; chill until firm.
  10. Spread with additional whipped cream and sprinkle grated lime peel around edge.
