Vegetable ham stew

  1. Remove skin, ligaments, and fat from the meaty ham bone.
  2. Boil/simmer bone until meat falls off (~1 hr.)
  3. Remove and reserve meat.
  4. For low fat version discard liquid, otherwise skim fat and reserve liquid.
  5. Add bouillon cubes and water or reserved liquid to crockpot.
  6. Add tomato paste to crockpot and stir.
  7. Add ham to crockpot
  8. Coarsely chop vegetables and add to crockpot.
  9. Add water to cover contents.
  10. Add spices, stir, cover and cook on low ~6 hours or until carrots are done.
