Vegetable ham stew
- 1 meaty ham bone
- 6 cup water
- 2 beef bouillon cubes
- 3 tbsp tomato paste
- 1/2 head red cabbage
- 1 cup sliced carrots
- 6 mushrooms (quartered)
- 3 green onions
- 1 yellow squash
- 2 cup frozen french cut green beans
- 1 cup fresh frozen peas
- 1 tsp garlic salt (optional)
- 1 tsp sage
- 1/2 tsp oregano
- 1/2 tsp basil
- 1/2 tsp ground cloves
- 1 large bay leaf
- Remove skin, ligaments, and fat from the meaty ham bone.
- Boil/simmer bone until meat falls off (~1 hr.)
- Remove and reserve meat.
- For low fat version discard liquid, otherwise skim fat and reserve liquid.
- Add bouillon cubes and water or reserved liquid to crockpot.
- Add tomato paste to crockpot and stir.
- Add ham to crockpot
- Coarsely chop vegetables and add to crockpot.
- Add water to cover contents.
- Add spices, stir, cover and cook on low ~6 hours or until carrots are done.
