Asparagus and Bacon with Soft Set Eggs
- 2 bunches Asparagus
- 4 rashers Bacon
- 2 Soft Poached Eggs
- 1 Black pepper
- 1 Parmesan cheese
- 1 Olive oil
- Cut the bacon into 1 cm and asparagus into 5 cm.
- Fry the bacon in olive oil and set aside from the pan.
- Fry the hard section of the asparagus first with the bacon fat and add the softer parts later on, since they'll cook through quicker.
- After the asparagus are fried, transfer to a serving dish.
- Scatter with fried bacon.
- Place the soft set eggs on top and dress with the packaged sauce that accompanies the eggs (if available -- the store-bought kind often comes with sauce in Japan).
- Sprinkle on parmesan cheese and black pepper.
- This is a pasta version.
- Cook the pasta in plenty of salted water with a little vegetable oil and mix with olive oil after cooking.
- Place the asparagus, bacon and soft-set eggs on top of the pasta.
- If necessary, season with salt and black pepper.
