Prawn Fritters
- 1/2 cup milk
- 1 egg
- 1 1/2 tablespoons sweet chilli sauce
- 400g cooked prawn cutlets, tail removed, chopped Safeway 1 lb For $8.99 thru 02/09
- 1 cup self raising flour, sifted
- 3 spring onions, chopped
- salt and pepper to taste
- 1-2 tablespoons oil
- 125g tub PHILADELPHIA Light Spreadable Cream Cheese
- 1 large avocado, peeled and mashed
- 1/4 cup chopped coriander
- 2 teaspoons grated lemon rind Safeway 4 ct For $5.00 thru 02/09
- 2 teaspoons lemon juice Safeway 4 ct For $5.00 thru 02/09
- salt and pepper, to taste
- extra sweet chilli sauce, to drizzle
- snow pea sprouts, to serve
- Whisk together the milk, eggs and sweet chilli sauce.
- Stir through the prawns, sifted flour, spring onions and seasoning to combine.
- Heat some oil in a large non-stick frying pan and cook tablespoons of mixture over a medium heat for 2-3 minutes each side until golden.
- Repeat with remaining mixture then set aside to cool.
- Combine the Philly*, avocado, coriander, lemon rind, juice and seasonings in a bowl.
- Top fritters with Philly* mixture, drizzle with extra sweet chilli sauce, top with snow pea sprouts and serve.
