Sweet beans pie recipe
- 1 kg (2.2lbs) sweet potatoes
- 25 g (0.9oz) butter or margarine
- 1 tbsp olive oil
- 1 medium onion, finely chopped
- 1 410g tin chopped tomatoes with juice
- 200 ml (7fl oz) vegetable stock
- 0.5 tsp dried thyme
- 1 tsp yeast extract
- 1 tsp soy sauce
- 2 410g mixed beans of your choice such as kidney beans, butter beans or baked beans
- 50 g (1.8oz) grated cheese
- Prick the sweet potatoes and roast them in their skins for 30 minutes or until soft.
- Allow to cool, peel, and mash with the butter/margarine.
- Put to one side.
- Heat the olive oil in a saucepan and gently fry the onion for about 5 minutes until soft.
- Add the stock with the tomatoes, herbs, yeast extract and soy sauce and stir.
- Bring to the boil, turn down the heat and simmer for 15 minutes.
- Stir in the beans.
- Pour the tomato and bean mix into a casserole dish and place the sweet potato mash over the top.
- Sprinkle the cheese over the top and cover in foil.
- Bake for 30 minutes.
- Remove foil and bake for a further 15 minutes.
- Allow to cool for 5 minutes before serving.
