Grilled Portabella Mushroom Pizza with Artichokes
- 2 whole Large Portabella Mushrooms, Cleaned And Stems Removed
- Olive Oil
- 13 cups Pizza Sauce
- 13 cups Jarred Artichoke Hearts, Oil Rinsed Off And Chopped
- 1 clove Garlic, Minced
- 2 teaspoons Dried Basil
- Fresh Mozzarella
- Crushed Red Pepper
- Grated Parmesan Cheese
- Heat grill to medium heat.
- Brush both sides of mushrooms with olive oil.
- Place mushrooms, stem side down and grill for 5 minutes.
- Flip mushrooms over.
- Spoon on pizza sauce, sprinkle with artichoke hearts, garlic and basil.
- Layer on fresh mozzarella.
- Close grill and cook for about 7 to 9 minutes, until mushroom is tender and cheese is melted.
- Garnish with crushed rep pepper and Parmesan, if desired.
