Muffins
- 65 g flour (wholewheat)
- 50 g oatmeal
- 1 teaspoon baking powder
- 1 apple (eating, grated)
- 75 g dates, chopped
- 25 g walnuts, chopped
- 12 teaspoon mixed spice
- 1 tablespoon sunflower oil
- 1 egg (free-range, beaten)
- milk (slimmed to mix)
- Preheat the oven to 375F/190C/gas mark 5.
- Sieve the flour and add the bran remaining in the sieve.
- Stir in the oatmeal and baking powder.
- Add the grated apple, dates, walnuts and spice and mix in well.
- Beat together the oil and egg and add to the bowl with just enough skimmed milk to mix to a dropping consistency - the mixure should fall from the spooon quite easily.
- Spoon into a prepared muffin pan or small patty cases and bake in the centre of the oven for 15-20 minutes until just firm and golden brown in colour.
