Sticky Marmalade Chicken
- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1 14 cups chicken broth
- 4 tablespoons marmalade
- 1 teaspoon thyme leaves or 12 teaspoon dried thyme
- Season the chicken with salt and pepper if you like.
- Fry the chicken in the oil for 8-10 mins turning once until golden on each side.
- Add the broth, marmalade and thyme.
- Simmer for 5 mins, remove the chicken and boil the mixture hard to reduce to a syrupy sauce, then pour over the chicken.
- Serve with rice or mash to mop up the sauce.
