Sausage & Potato Frittata

  1. Heat enough olive oil to cover the bottom of a medium sized non-stick saute pan to medium heat.
  2. Add chunks of sausage in bite sized pieces.
  3. Add peppers, potatoes, and onions.
  4. Season.
  5. Toss.
  6. In a seperate bowl, whisk together eggs and milk with a pinch of salt and black pepper.
  7. When sausage is 90% cooked, add crushed pepper flakes, corn, garlic, and ham.
  8. Cook for 30 seconds to a minute.
  9. Add butter.
  10. Stir.
  11. Add eggs and cheddar.
  12. Stir.
  13. Bake uncovered in a non-stick saute pan at 350 for approximately 15 min or until liquid is cooked.
  14.
