Calzone
- 1 recipe pizza dough
- Flour, for dusting
- 2 cups fresh ricotta cheese
- 3/4 lb. dry hot sausage
- soppressata, thinly sliced
- Steamed broccoli
- Caramelized onions
- Sundried tomatoes
- Prosciutto
- Olives
- Basic tomato sauce
- Preheat oven to 425F.
- Place clean pizza stone in oven to preheat.
- Dust a clean work surface lightly with flour.
- Take first of 4 rounds of dough and flatten with fingers and palms until about 1/8- to 1/4-inch thick and oval-shaped.
- Place 1/2 cup ricotta and 1/4 of the dry sausage in upper part of center of rolled dough.
- Fold dough to form a half moon and then seal the edges.
- Repeat with other 3 pieces.
- Place on stone in oven and cook until dark golden-brown, 10 to 12 minutes.
- Remove from oven and serve immediately.
