Curried Cauliflower and Chickpea Pitas

  1. Preheat oven to 400F.
  2. Toss cauliflower with curry powder.
  3. Spread on baking sheet, and roast 10 minutes.
  4. Transfer cauliflower to large bowl, and toss with chickpeas, parsley, onion, mint, raisins, vinegar, and honey.
  5. Fill each pita half with 1 cup cauliflower mixture.
