SHAKE'N BAKE Pork Tenderloin with Apricot Stuffing

  1. CUT each tenderloin lengthwise (not all the way through) and open out flat.
  2. Pound slightly to flatten.
  3. SAUTE onion in butter until softened.
  4. Stir in apple, apricots and 2 tbsp (30 mL) of the coating mix.
  5. Spread stuffing along centre of one tenderloin.
  6. Top with remaining tenderloin.
  7. Tie with string to secure.
  8. SPRINKLE remaining coating mix evenly over meat.
  9. BAKE at 400F (200C) for 45 minutes.
  10. Slice and serve.
