SHAKE'N BAKE Pork Tenderloin with Apricot Stuffing
- 2 pork tenderloins, (about 3/4 lb/375 g each) Safeway 1 lb For $3.99 thru 02/09
- 1 onion, chopped Safeway 3 lb For $2.99 thru 02/09
- 2 Tbsp. butter
- 1 unpeeled red apple, chopped Safeway 1 lb For $0.99 thru 02/09
- 1/2 cup chopped dried apricots
- 1 envelope Shake'N Bake Pork Coating Mix
- CUT each tenderloin lengthwise (not all the way through) and open out flat.
- Pound slightly to flatten.
- SAUTE onion in butter until softened.
- Stir in apple, apricots and 2 tbsp (30 mL) of the coating mix.
- Spread stuffing along centre of one tenderloin.
- Top with remaining tenderloin.
- Tie with string to secure.
- SPRINKLE remaining coating mix evenly over meat.
- BAKE at 400F (200C) for 45 minutes.
- Slice and serve.
