Garden Fresh Fettuccine

  1. Cook fettuccine according to package directions.
  2. Meanwhile, in a large skillet, saute the zucchini, peppers, onions and garlic until tender.
  3. Add the tomatoes, salt, pepper, and pepper flakes.
  4. Saute 4-5 minutes longer.
  5. Drain pasta and add to vegetable mixture.
  6. Toss to coat and sprinkle with cheese.
  7. I liked putting a little sprinkle of fresh parsley over the top.
