Breakfast Burrito
- 4 ounces chorizo sausage
- 12 red onion, chopped fine
- 3 garlic cloves, crushed
- 4 ounces green chilies, chopped
- 12 cup cilantro leaf, chopped
- 1 cup egg substitute (I use egg beaters)
- 4 corn tortillas
- 12 cup low-fat cheddar cheese, shredded
- Spray a skillet with some cooking spray to ensure that nothing sticks.
- Break the chorizo into small pieces and cook until they're done.
- There's usually a bit of grease, so I drain that right away.
- Add in the onion, garlic, chiles, and cilantro.
- Saute until the onions are soft, which is usually about a minute or two.
- Add in the egg subsitute and scramble everything together.
- I put the tortillas in the toaster oven to warm then up.
- Once they're done put the egg mixute in them, towards the center.
- I sprinkle the cheese over that, thenr oll them up!
