Sweet Cranberry Raisins Rice Pudding
- 1 12 cups medium grain rice or 1 12 cups long grain rice
- 3 cups water
- 12 teaspoon salt (heaping)
- 8 cups whole milk (I use 2%)
- 3 teaspoons vanilla
- 3 teaspoons cinnamon
- 1 cup dried cranberries
- 1 cup raisins
- 1 12 teaspoons honey
- 1 cup ricotta cheese
- 1 cup apple cider
- Boil rice, water and salt for 15 minutes make sure your pot is covered.
- Add milk, vanilla, cinnamon, cranberry, raisins, honey and ricotta cheese.
- Cook in oven at 250 for 20 minutes.
- Cool until warm and serve.
