Chilled Raspberry Bavarian Cake

  1. Soften gelatin in water 5 minutes.
  2. Scald milk, add gelatin and stir until disolved.
  3. Mix egg yolks with sugar and add hot milk gradually.
  4. Cook over boiling water 3 minutes until mixture coats a spoon.
  5. Remove from heat and chill.
  6. When mixture begins to thicken add lemon juice and raspberries.
  7. Fold in stiffly beaten egg whites and whipped cream.
  8. Pour into spring-form pan and chill until firm.
  9. Unmold and serve in slices like cake.
