Brown Rice and Vegetable Casserole
- 2 cups cooked brown rice
- 1 carrot, diced
- 1 zucchini, diced
- 1 (15 ounce) can mushrooms
- 4 slices swiss cheese, chopped
- 3 tablespoons fresh basil
- 1 (15 ounce) can diced tomatoes
- 1 teaspoon onion powder
- salt and pepper, to taste
- Drain the canned items.
- Combine all ingredients, reserving enough swiss to sprinkle over top.
- Place in a 2 quart casserole dish.
- Bake at 325 for 45 minutes.
