Asparagus Bruschetta
- 1 Tablespoon Extra Virgin Olive Oil, Plus More To Drizzle On Baguette Slices
- 1/4 cups Onion, Chopped
- 5 ounces, weight Asparagus, Woody Ends Trimmed Off And Chopped Into Pieces
- 1 teaspoon Garlic Garlic Seasoning (or 1 Clove Garlic)
- 1 pinch Sea Salt And Pepper, To Taste
- 8 slices Baguette
- 2 ounces, weight Fresh Mozzarella, Sliced Into Small Pieces
- 1 Tablespoon Sun Dried Tomato Vinaigrette
- 1 Tablespoon Basil, For Sprinkling
- Heat the olive oil over medium heat.
- Add in the onions and allow to soften slightly.
- Add in the asparagus and cook until slightly soft, 2-3 minutes.
- Add in the Garlic Garlic, sea salt and pepper.
- Cook for about 3 more minutes.
- Place the baguette slices on a baking sheet and drizzle with olive oil.
- Top with the slices of mozzarella and place under the broiler until the bread is lightly toasted and the mozzarella is slightly melted.
- Top with the asparagus mixture and drizzle with the vinaigrette.
- Sprinkle with basil.
- Serve immediately.
