Passover Brownies
- 1 cup sugar
- 1/4 cup unsweetened cocoa powder
- 2 eggs, beaten
- 1/2 cup peanut oil
- 1/2 cup matzo meal
- 3 squares (1 oz. each) semi-sweet baking chocolate, cut into chunks
- 1/2 cup chopped PLANTERS Nuts (optional)
- 5 squares (1 oz. each) semi-sweet baking chocolate
- 1 tsp. margarine
- 1/2 tsp. MAXWELL HOUSE Instant Coffee Walgreens $6.99 thru 02/06
- 1 Tbsp. hot water
- 3 Tbsp. BREAKSTONE'S or KNUDSEN Sour Cream
- 1/2 tsp. imitation vanilla
- Mix sugar and cocoa until blended.
- Stir in eggs and oil.
- Mix in matzo meal, chocolate chunks and nuts.
- Spread into greased 8-inch square baking pan.
- Bake at 350F for 30 to 35 minutes or until toothpick inserted in center comes out almost clean.
- (DO NOT OVERBAKE.)
- Cool in pan on wire rack.
- Meanwhile, microwave chocolate squares and margarine in microwavable bowl on HIGH 2 minutes or until margarine is melted.
- Stir until chocolate is melted; set aside.
- Dissolve coffee in water.
- Stir in sour cream and vanilla.
- Add to chocolate mixture.
- Spread glaze over cooled brownies.
- Cut into squares.
