Flap Happies (Pancakes)
- 3 eggs
- 1 cup heavy cream
- 1 cup sour cream
- 13 cup buttermilk
- 12 teaspoon vanilla extract (my addition)
- 2 tablespoons sugar
- 1 teaspoon salt
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 cup unbleached white flour
- Beat eggs by hand mixer for 2 minutes.
- Fold in the heavy cream, sour cream, buttermilk and vanilla extract.
- Sift together the dry ingredients, stir into the egg mixture {just} until smooth.
- DO NOT overstir or the pancakes will turn out tough!
- Measure out 2 tablespoons of the batter using a greased measuring spoon.
- Cook the pancakes on a lighlty greased and heated non-stick pan over MEDIUM heat for at least 2-3 minutes, depending on the stove.
- Do not cook the pancakes any higher than medium or they will burn!
- Very carefully flip pancakes over and cook on other side until golden brown.
- Do not crowd.
- Their texture is very delicate and can burn easily.
- Keep pancakes on warming platter until ready to serve.
- About twenty-five 3" diameter pancakes.
