Double Chocolate Bar Cake

  1. Preheat oven to 350F (180C).
  2. Grease and flour 3 (9-inch) round baking pans.
  3. In a small bowl, stir together chocolate bar pieces, butter and water until chocolate melts.
  4. In a large mixer bowl, stir together flour, sugar, cocoa powder, baking soda and salt.
  5. Gradually add chocolate mixture, beating on medium speed until well blended.
  6. Add eggs, sour cream and vanilla; beat until well blended.
  7. Beat on medium speed 1 minute.
  8. Pour batter into prepared pans.
  9. Bake 25 to 30 minutes or until wooden pick inserted in center comes out clean.
  10. Let cool 10 minutes; remove from pans to wire racks.
  11. Let cool completely.
  12. To prepare frosting: In large mixer bowl, stir together sugar and cocoa powder.
  13. Add cream and vanilla; beat until stiff.
  14. Use to fill and frost cake.
  15. Refrigerate any leftover cake.
  16. Tester's note: Very rich, light cake.
