Green Bean and Onion Vinaigrette

  1. Cook the beans in boiling, salted water until tender crisp, about 5 minutes.
  2. Drain and run under cold water to stop the cooking process.
  3. Drain again.
  4. In a small bowl, combine the parsley, vinegar, and mustard.
  5. Whisk in olive oil, salt and pepper.
  6. Place the beans in a serving dish.
  7. Garnish with the red onion rings.
  8. Spoon sauce over top and toss lightly.
