Rice Paper Galette

  1. Heat your frying pan.
  2. Soak the rice paper in water and, once softened, put a bit of vegetable oil in the pan and set the rice paper on top.
  3. Quickly top with the ham and crumble the cheese on top.
  4. Crack the egg on top of the ingredients, cover with a lid, and cook until the egg is as firm as you like.
  5. (If you add a tablespoon of water, it will steam faster.)
  6. Remove the lid, turn the heat to high.
  7. Once the rice paper is crispy, sprinkle with black pepper, and fold the corners of the paper.
  8. Serve while hot.
