Veal Medallions Recipe

  1. Prepare bread crumb mix by combining bread crumbs, minced parsley, and lemon rind.
  2. Toast almonds in oven at 350 degrees for several min till lightly browned; set aside.
  3. Heat skillet with oil over a medium flame.
  4. Dust veal in flour.
  5. Shake off excess.
  6. Dip into Large eggs, then drop into bread crumb mix.
  7. Don't grind crumbs into veal.
  8. Remove from crumbs.
  9. Pan fry, turning periodically, to golden.
  10. Serve 4 slices per person; garnish with almonds and lemon butter.
  11. Serve with lemon butter recipe.
