Roasted tomatillo salsa
- 5 tomatillos
- 3 avocados
- 1 jalapeno
- 1/4 onion
- 1/2 cup cilantro
- 1 lime juiced
- 1 tsp oil
- 1/2 tsp salt
- Peel and wash tomatillos.
- Cut jalapeno in half, if you want more spice leave seeds in, if not scrape them out.
- Place tomatillos, onion and jalapeno on a cookie sheet.
- Drizzle with oil and sprinkle with salt.
- Place your oven rack on the top shelf and turn oven to broil hi.
- Place cookie sheet with ingredients in oven.
- Cook for 5 minutes on each side.
- Continue flipping them until everything is well roasted, slightly browned.
- Onion usually cooks more quickly followed by the jalapeno so pull them out as they look done so they don't burn.
- Place cilantro and lime juice in food processor or blender.
- Add tomatillos, onion and jalapeno in the blender as well as they finish roasting.
- Blend until all ingredients are well mixed.
- Add avocados last and blend until smooth.
- Chill and serve with chips.
- Also good on any Mexican dish like tacos, burritos or enchiladas.
