Classic Yellow Birthday Cake
- 1/2 cup dairy-free margarine
- 1 cup granulated sugar
- 1 cup soy milk
- 1 teaspoon vanilla extract
- 1/2 cup silken tofu
- 2 cups cake flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- In the bowl of a stand mixer fitted with the paddle attachment, combine the margarine and sugar until light and fluffy, Add the soy milk, vanilla, and tofu, and mix until thoroughly combined.
- In a separate medium bowl, combine the cake flour, baking powder, and salt with a wire whisk, Add the cake flour mixture to the margarine-soy milk mixture and mix on low for 1 minute until combined, Increase the speed to medium high and beat for an additional 3 to 4 minutes.
- Preheat oven to 375F, and generously spray one 9-inch cake pan or a 13x9-inch baking pan with dairy-free baking spray.
- Pour the batter into the prepared cake pan, and bake for 25 to 30 minutes, or until an inserted cake tester comes out clean, Cool completely before frosting.
