Seafood Noodle-Soup Supper

  1. Rinse scallops with running cold water to remove sand from crevices; cut each horizontally in half.
  2. Slice bok choy crosswise.
  3. Cut ham into 1/4-inch strips.
  4. Cut carrot into matchstick-thin strips.
  5. Remove seasoning packet from soup mix.
  6. In 5-quart saucepot, heat packet and 6 cups water to boiling.
  7. Stir in bok choy, ham, carrot, soy sauce, and ginger; heat to boiling.
  8. Add scallops and noodles, stirring to separate noodles, and heat to boiling.
  9. Reduce heat to low; cook 1 minute.
  10. Ladle soup into 3 large soup bowls.
