Apricot Honey Chicken

  1. Mix all ingredients except chicken in a saucepan.
  2. Over low heat, simmer together for about 10 minutes, stirring to prevent sticking.
  3. Pat chicken dry, place into a 13x9 pan, seasoning well.
  4. Pour apricot mixture over top.
  5. Cover tightly with foil.
  6. Cook at 400 until done, about 45 minutes or until juices run clear.
  7. Delicious!
