Tablatini
- 2 cups pineapple juice
- 8 stalks fresh lemon grass, 6 coarsely chopped and 2 halved crosswise
- 4 small fresh pineapple wedges
- 8 ounces of Absolut Citron vodka
- Juice of 1 lime
- In medium saucepan, simmer pineapple juice with chopped lemon grass for 15 minutes; let cool.
- Strain into a jar, and chill.
- Spear the pineapple wedges with the halved lemon grass stalks.
- To a pitcher with ice, add pineapple juice, vodka and lime juice.
- Mix, and strain into 4 chilled martini glasses.
- Add pineapple-wedge garnish.
