Apple Rice Betty
- 2 cups apple juice
- 1 12 cups chopped peeled tart apples (about 2 medium)
- 1 cup uncooked instant brown rice
- 12 cup raisins
- 12 teaspoon ground cinnamon
- 18 teaspoon salt
- 13 cup Splenda granular, sugar substitute
- 6 tablespoons reduced-fat whipped topping
- In a saucepan, combine the first six ingredients and bring to a boil.
- Reduce heat, cooking and stirring for 6-7 minutes or until most of the liquid is absorbed and rice is tender.
- Remove from the heat and mix in Splenda.
- Refrigerate for 1 hour.
- Garnish with whipped topping if desired.
