Brough House Oatmeal Raisin Muffins

  1. Combine dry ingredients (except raisins) in mixing bowl.
  2. Whisk together wet ingredients, and stir gently into dry.
  3. Stir in raisins.
  4. Spray muffin cups and fill 3/4 full with batter.
  5. Let sit for 15 minutes.
  6. Bake 20 minutes or until golden brown and firm.
  7. Remove to rack to cool slightly, then serve warm with a drizzle of honey.
