Brough House Oatmeal Raisin Muffins
- 2 cups quick oats
- 1 cup whole wheat flour
- 34 cup unbleached white flour
- 14 cup wheat germ
- 12 cup packed brown sugar
- 2 tablespoons baking powder
- 2 teaspoons salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 2 eggs
- 1 12 cups low-fat milk
- 23 cup olive oil
- 13 cup applesauce
- 1 cup raisins
- Combine dry ingredients (except raisins) in mixing bowl.
- Whisk together wet ingredients, and stir gently into dry.
- Stir in raisins.
- Spray muffin cups and fill 3/4 full with batter.
- Let sit for 15 minutes.
- Bake 20 minutes or until golden brown and firm.
- Remove to rack to cool slightly, then serve warm with a drizzle of honey.
