Chile Egg Puff Recipe
- 10 Large eggs
- 1 teaspoon baking pwdr
- 2 c. cottage cheese
- 1/3 c. butter, melted & cooled
- 1/2 c. flour
- 1/2 teaspoon salt
- 4 c. grated Jack cheese
- 2 (4 ounce.) cans diced chilies
- Beat Large eggs in large bowl, beat in flour, butter, baking pwdr and salt.
- Mix together cottage cheese, Jack cheese and chilies, and add in to egg mix.
- Blend till smooth and pour into well buttered 9 x 13 inch pan.
- Bake at 350 degrees till puffy and golden, approximately 45 min to 1 hour.
- Egg Beaters may be used in place of Large eggs.
- (Great to serve for a brunch!)
