Beets Stuffed With Vegetables And Rice Recipe

  1. Remove stems and roots from beets.
  2. Drop beets into boiling water; cook till tender.
  3. Drain and cold.
  4. Peel beets.
  5. With a melon ball scoop, remove the beet flesh, leaving a 1/2" shell.
  6. Heat oil in a large skillet.
  7. Saute/fry kohlrabi, olives, pickles and onions till the vegetables are soft.
  8. Add in lemon juice, salt and pepper.
  9. Remove mix from heat; cold.
  10. Blend in the cooked rice, thyme and parsley.
  11. Stuff beets with this mix and cover each with a slice of lemon.
  12. Bake in a preheated 325F oven for 35 min.
