Meatloaf Madness
- 1 tbsp. olive oil
- 1 can (8 oz.) tomato sauce
- 1/4 tsp. pepper
- 1 tbsp. steak sauce
- 1 cup chopped orange
- red bell pepper
- 1 cup chopped red onion
- 2 lb. ground beef
- 2 eggs
- 2 tsp. garlic salt
- 1/2 cup matzah (matzo) meal
- Chili sauce
- Butter
- margarine (to grease pan)
- Pre-heat oven to 350F.
- Saute peppers in olive oil over medium heat until soft (about 3 or 4 minutes).
- Add onions and continue to saute for another 10 minutes.
- Meanwhile, in a mixing bowl, combine ground beef and tomato sauce, steak sauce, eggs, garlic salt and pepper.
- Add matzah meal; mix thouroughly.
- Remove onions and peppers from heat, let stand a few minutes.
- Once cool, mix the peppers and onions with the meat mixture.
- Mold into bread shape, and place in a greased bread pan.
- Cook for 60 (medium) to 80 (well done) minutes.
- During the last 20 minutes, remove from oven and add thin layer of chili sauce to the top.
- Increase temperature to 400F and return to oven.
