Apricot Muffins Recipe

  1. Preheat oven to 400F, prepare pans.
  2. Thoroughly blend the margarine & sugar & then beat in the remaining wet mix ingredients.
  3. Mix in the flour, spoon into pans & bake for 25 mins.
  4. Makes 10-12 muffins.
  5. Variations:Apricot & Almond: Add in 1/2 c. of tasted slivered or possibly minced blanched almonds to the wet mix.
  6. Apricot & Coconut: Add in 1/2 c. dessicated coconut to the dry mix & 1/2 c. additional orange juice to the wet mix.
