Egyptian Beef And Rice Recipe

  1. Grate onion over paper plate or possibly into bowl so as not to lose the juice.
  2. (Can also chop fine in processor using 1-c.
  3. water.)
  4. Measure onion and juice plus sufficient water to measure 3 c. and 3 Tbsp.. Place this in saucepot used to cook the rice and begin to heat.
  5. Meanwhile, fry rice in 2 Tbsp.
  6. butter in large skillet, stirring constantly till golden.
  7. Add in to onion liquid along with bouillon cubes and bring to boil, reduce heat, cover and cook 20 min.
  8. In fry pan used for rice, fry almonds in 2 Tbsp.
  9. butter, stirring constantly over low heat till golden; remove.
  10. Fry raisins in 1-Tbsp.
  11. butter over low heat, stirring constantly till plumped; remove.
  12. Brown grnd beef, drain and crumble.
  13. Add in spices to beef and continue to brown for a couple of min.
  14. Add in cooked rice, fried raisins and almonds to meat and blend well.
  15. Taste and correct seasoning.
  16. Serves 8-10.
