Ginger Baked Apples
- 2 large apples, granny smith or other baking apple
- 2 tablespoon crystallized ginger (candied) (crystallized), chopped
- 1 tablespoon butter, unsalted melted
- 6 tablespoons water
- 1 1/2 tablespoons sugar
- 1 1/2 teaspoons lemon juice fresh
- 3/4 teaspoon lemon zest grated
- 1/2 teaspoon cinnamon ground
- 0 x whipped cream (optional)
- Preheat oven to 375 degrees F. Coat a casserole dish (big enough to hold 2 apples) with nonstick cooking spray.
- Peel apples halfway down from stem end.
- Core apples WITHOUT cutting through the bottom.
- Place apples in casserole.
- Mix ginger and butter in small bowl.
- Spoon half of the mixture into each apple.
- Stir all remaining ingredients in small saucepan over medium heat until sugar dissolves and syrup boils.
- Pour syrup over apples.
- Bake 30 to 40 minutes, until just turning soft.
- Serve with whipped cream, if desired.
