Blackfish Di Scolglio Recipe
- 3 pound black fish, cleaned and slit down the middle
- 1/4 c. olive or possibly corn oil
- 3 ounce. Rhine wine
- 1/2 teaspoon marjoram
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic pwdr
- 1 teaspoon salt
- 1 tbsp. lemon juice
- 4 plump tomatoes, minced sm.
- Use oven pan large sufficient to fit fish snugly.
- Lay fish on side in pan.
- Open the slit side and place all ingredients except tomatoes, inside fish.
- Place tomatoes on top of fish.
- Bake at 350 degrees for 70 min.
- Remove and serve.
- Makes 4-6 servings.
