Cheddar Bacon Potatoes

  1. Preheat oven to 425.
  2. Saute onion on med low heat in olive oil or use left over bacon grease and a touch of olive oil until transparent
  3. Add garlic for a couple of minutes, careful not to burn
  4. Add sliced potatoes and season with salt and pepper.
  5. Mix in both soups.
  6. Mix well and continue to cook on med low for about 10 minutes
  7. Transfer everything into a baking dish.
  8. Add most of the chopped bacon, green onion and cheddar cheese, but be sure to leave some left over.
  9. Mix in with potatoes.
  10. Bake on 425 for 30 minutes.
  11. Top with remaining bacon, cheddar and green onion.
  12. Bake for another 15 minutes.
